In Burgundy, sparkling wines have existed for generations but their production has been overshadowed by the more popular region next door – Champagne. At the beginning of the 19th century in Côte d’ Or, two wine merchants started a more quality production of sparkling wines from the best Burgundy vintages. Their innovation led to the Controlled Appellation ‘Crémant de’, followed by the name of the area of its origin. Crémant became associated with a method of making sparkling wine according to the grapes and the places of production. And so was born the “Cremant de Bourgogne”. The fruit for these outstanding wines originates from the region right next door to Champagne and they are carefully stored in caves and matured on racks for 24 months. The decree for Crémant only mandates that aging be for 12 months. All the fruit is picked by hand, and the secondary fermentation inside the bottle is a guarantee that maturation is achieved without adding gas.

Cave des Vigneron de Buxy is an expertly run cooperative in the Côte Chalonnaise region of southern Burgundy. In the past, the word “cooperative” initiated more negative thinking than good, but in today’s modern era of winemaking, better and better wines are being associated with winery co-ops. Buxy happens to be one of those facilities who benefits from working with more than 1,100 top-notch vineyard managers that grow their fruit to the winery’s specifications. In addition, the winery has opened its doors to their boutique producers from several of the village domains such as Givry and Mercurey so the winemakers can utilize all the latest technology when making their small production, artisan wines. The wines made under the Buxy label are expertly made, show beautiful balance and are incredibly affordable. The winery is very well known for its Montagny 1er Cru, so if you taste only one wine from this house, make sure you don’t miss this Chardonnay.
